Lemon Posset


Prep Time: 



  • 4 - 6 People


1 pint double cream
110g/4 oz caster sugar
½ tsp. vanilla extract
2 Lemons, juice only


Pour the cream into a large saucepan and add the sugar. Boil for 3 minutes.Remove from the heat , add vanilla extract and whisk in the lemon juice.Strain the mixture into a jug before pouring into the ramekins. Leave them to cool and refrigerate for 4-6 hours before serving.
To Serve: Serve with black pepper biscuits
