Faithlegg House Hotel's Chocolate Chip Cookies

320g Odlums Cream Flour

1 teaspoon of Baking Soda

1 teaspoon of Salt

225g Kerrygold Butter

170g Castor Sugar

2 large Free Range Eggs

1 teaspoon Vanilla Extract

340g Dark Chocolate Chips       


These chocolate chip cookies are our kitchen's specialty treat for all guests staying in the hotel and will be waiting in the room for you on arrival.     

In a large bowl sift the flour, baking soda and salt. Cream the butter and sugars together in a large mixing bowl until they are at the ribbon stage. Add eggs to butter mixture one at a time beating well after each addition. Mix in Vanilla extract. Fold in the flour mixture taking care not to knock out all the air. Stir in the chocolate chips.
Using an ice-cream scoop, or large tablespoons, drop balls of cookie dough onto ungreased baking trays.
Bake in a pre-heated oven 190 degrees celcius for 9-11 minutes or until golden brown.
