French Toast with Raspberries and Vanilla
Brioche or milk pan 1
Free range eggs 4
Heavy cream 250ml
Vanilla pod 1
For the French toast mix all the ingredients together, slice the bread and dip into the mixture, pan fry in a non-stick pan using a little butter. Cook on both sides for a couple of minutes until golden brown.
To make the compote place all ingredients into a sauce pan and bring to a boil, reduce heat and cook for a couple of minutes and taste for sweetness - add a little more sugar if necessary.
Dust with a little icing sugar before serving as is or with a dollop of natural yoghurt.
