Located in the stunning surrounds of the Co. Mayo countryside is home to Michael and Aisling Flanagan and their flock of rambunctious sheep. Rockfield Dairy represents the new and ever-growing innovation in farming which sees farmers looking to alternative uses for their food outside of the more traditional methods of farming. Thus we find Michael Flanagan with a background in traditional dairy farming and his wife Aisling, turning their attention to the production of sheep’s milk and the delightful food products that come from this venture. The production of sheep’s milk products has been primarily dominated by Mediterranean countries. Many of us are familiar with sheep’s milk products in the form of famous cheeses such as Feta from Greece, Ricotta from Italy and Roquefort from France. Michael and Aisling were won over by the popularity of sheep’s milk in southern regions along with its health properties and its potential as a free from product and decided to bring sheep’s milk products to their farm in the West of Ireland. 

Heavy investment in facilities and livestock has resulted in the production of handmade natural sheep’s milk, yogurt and cheese under the Velvet Cloud range. The West of Ireland’s climate and eco system and the land on which the sheep graze has leant itself to an enticing flavour for these delightful products. 

Velvet Cloud’s sheep’s milk yogurt is produced using only two ingredients – sheep’s milk and live yogurt cultures that result in a creamy yogurt, mild in taste. This sheep’s milk yogurt has proven very popular with both consumers and the restaurant trade, featuring on the menu’s of some of Ireland’s well established restaurants and spoken of highly by some of Ireland’s top chefs. 

For consumer’s enjoying Velvet Cloud sheep’s milk yogurt in the comfort of their homes, the yogurt works perfectly in a bowl of fresh fruit, especially with some summer season strawberries. Add it to your morning smoothie or jazz up your bowl of cereal with a dollop of this creamy goodness…  

Rockfield Sheep’s Milk Cheese is also produced by Velvet Cloud and represents one of a very few sheep’s milk cheeses being produced in Ireland. Sheep’s milk cheese has a defining composition with its nutty flavour and crumbly texture depending on how long it matures. Starting at a minimum of ninety days maturation, the cheese progresses from creamy to a firmer and darker in appearance and texture as it matures. You can also expect the flavour to develop a more nuttier taste as it matures. 

Velvet Cloud’s sheep’s milk products also fit well in the ever increasing in demand health, food intolerance and free from markets. Sheep’s milk suits many who suffer with a cow dairy intolerance. Due to the fat globules in sheep’s milk being smaller than both cow’s and goat’s milk the milk is more homogeneous and the smaller stature of the globules are easier to digest in the human body.
