Our Review of The Three Towers Eco House & Organic Kitchen at Slieve Aughty Centre

It’s time to put down the phone, turn off that pesky email and head West for an exceptional Eco experience at The Three Towers Eco House & Organic Kitchen at Slieve Aughty Centre in Loughrea, Co. Galway. This unique lodging is more than happy to welcome the world-weary traveller who is looking to leave behind the hustle and bustle of modern life in favour of reconnecting with nature and the seasons.

Founded by Esther Zyderlaan and her family, including husband Hugo and daughter Merel, the Three Towers in its humble beginnings represented a desire for a more sustainable life for Esther and Hugo who moved to Galway from their native Netherlands after purchasing eight acres of land. First and foremost following Esther’s passion, an organic garden was created. Not long after a small herd of goats were obtained for their very own dairy. This proved a success, and to this day their cheeses and yoghurt are still being sold in one of the longest standing Galway market stalls. The growth of this venture also included a successful stable on the land.

With an ever-growing desire among the public to find authentic eco experiences, Esther dreamed of growing their sustainable endeavour into a retreat that would welcome people who would like to connect with nature and healthy living. This dream came to an abrupt halt in 2006 when the country was gripped by a global recession. What followed consisted of numerous sleepless nights and hard work to keep the business afloat. Hope came in the form of a rural development grant issued in 2012, which allowed Three Towers Eco House & Organic Kitchen to flourish and realise its potential. The Three Towers now welcomes a wide variety people and groups, including weddings, parties, workshops, organic dining and corporate events.

Accommodation at the Three Towers Eco House, is a strong reflection of the sustainable ethos that is so important to the Zyderlaan family. The team at Three Towers encourage visitors to fully immerse themselves into the eco lifestyle and therefore you won’t find TVS or WIFI, except in the public areas. As the team at Three Towers state, ‘who needs TV when you’ve got the view outside which provides better entertainment!’ Without these worldly distractions you’ll be guaranteed a restful night’s sleep, and energised ready to tackle the day ahead!

For those who would like more privacy or are feeling a bit more adventurous, Three Towers Eco House also have a lodge and glamping facilities on site. The Chalet de Florence, comfortably sleeps a family of six or a small group of adults. Enjoy an open plan kitchen and living room along with a wood burning stove, to keep nice and cosy during those chilly evenings. Similar to the main house accommodation, you won’t find TV or WIFI in these spots, as you are encouraged to immerse in and enjoy the natural beauty that surrounds you. Glamping facilities include a double loft room with pull out sofa bed, perfect for a romantic getaway or small family stay. Make sure to book a time in the close by outdoor hot tub that will melt all the stress and tension away from the body.

The sustainable, eco ethos is of paramount importance to Esther and her team at Three Towers and is found in every aspect of their operation, including their Organic Kitchen eatery. Tom Durcan, craft butcher of over twenty five years experience, is a master of spiced beef. It has won him many honours. This fine Cork speciality is the underlining product at his butcher’s stall in the English market. Tom’s career began as a youngster, when he took a summer job in a butcher’s shop during school holidays. The experience proved invaluable. Working with an experienced butcher with his own slaughter house provided what Tom describes as a ‘fantastic education’ for the young novice in how to source animals, and the ground rules for good butchery.
