This little stall, a favourite in Cork's English Market for over twelve years, could almost be renamed Sandwiches ''R' Us! The Sandwich Stall is by far one of the busiest in Cork City's famous covered all year round food market. Take a walk by just before the lunch hour kicks in, and see the amazing range of sandwiches and salads on offer. Stroll by again at about 3pm, and there won't be a crumb left.

Jenny Rose Clarke has created a fabulous concept here. Customers range from office workers to shop assistants, doctors and lawyers, to market traders and builders. Everyone who knows anything about real fast food comes here to buy their sambos. Class barriers are broken down in the name of good honest grub! The Sandwich Stall originally came about when Jenny Rose worked at the neighbouring deli stall, which she co-owns with her partner Toby Simmonds. Often she would get asked if she could make a sandwich to take away from the array of gorgeous foods available. Many times she had to refuse, on the basis of lack of space. When the next door corner stall became available, she grabbed the opportunity to expand the business. A range of sandwiches was created, packed with exciting fillings using local and Irish cheeses, charcuterie and mediterranean produce. Add to these the full range of Italian cheeses now made at the couple's award winning Toonsbridge Dairy in Macroom, which is on site at their former family home. Buffalo Mozzarella is made from Italian DOP certified buffalo milk, while Caciocavallo and Scarmorza is made with local Kerry Cow milk, and Pecorino from local sheep's milk. Bread from fellow Good Food Ireland member Ryan's Arbutus, is used for all sandwiches, which are filled and handcut freshly each morning, ready for the day's takeaway lunch time trade. There's also a salad bar where you purchase the salad you want by weight, then it gets put in a tub rather like a Chinese noodle carton, and off you go.Delicate salad leaves come from an organic small holder in Kinsale and from Jenny Rose's own organic garden at Toons Bridge. Soup of the Day is always seasonal. A favourite in warm weather is Sweet Tomato and Wild Garlic. When it's nippy, find popular and substantial choices like Thai Sweet Potato, Silky Lemongrass and Chilli or Chick Pea, Sweet Potato, Spinach, Cumin Seed and Honey. A hot dish of the day could be the extremely popular Chana Massala or another eclectic recipe customers demand time and again!

The Sandwich Stall feeds the Market with the feel good factor, as much as it feeds its customers with fab food.There is a small counter here, seating about eight people on high stools, at a push! If you manage to get a place on the high bench you can munch away and revel in what Jenny describes as the ''magical atmosphere' of one of the busiest markets in the world. Just before trade gets brisk, the counter is stacked high with sandwiches. Return after lunch and you'll find not much more than a few crumbs left. Everything goes every day, so you can be sure the sandwiches here are always fresh each morning.

For dessert, The Sandwich Stall also serves a selection of cakes and gateaux made in house and by local Cork pastry makers. Drinks here are kept simple - good coffee from a local Cork artisan roastery, Cork's Barry's Tea, Hot Chocolate, and a range of herbal teas, Irish and contientental soft drinks and fresh Irish apple juice. As they say in these parts, ''Sure, what more would you be wanting?'.
