So much so, he is a previous winner of our Ambassador of the Year award - the top accolade for someone dedicated to seasonal and local produce and not afraid to step outside the box to showcase it.
So - be assured - the gourmet experience at The Garden Room fully lives up to the grand surroundings in which it is enjoyed. A less formal affair in a relaxed formal garden setting can be savoured when dining in the beautiful surrounds of The Garden Room at The Merrion. An air of whimsy and airiness that surrounds the setting is reflected in the carefully constructed menu devised by Ed Cooney and his dedicated team. Ed's menu encourages the sharing of delightful flavours and tastes with your group of friends and family as you clink glasses in the Dublin sunshine.
Prepare to enjoy wonderful fish dishes including Clare Island Organic Salmon with King Scallops, Grilled Black Sole or light Steamed Fillets of Plaice. Find melt-in-the-mouth Irish Fillet Steak, herbed Rack of Lamb and Loin of Kilkenny Veal - all Irish reared - as part of the selection of mains. Ed Cooney takes all these core ingredients and adds his unique twist in terms of taste and presentation. As for the desserts, they are are as well constructed and thought out as any of the mains- Ed Cooney's own recipe Merrion Apple Tarte Tatin often features, but whatever you choose, you won't find fault with it. A five star chef for a five star hotel.
Wine lists are composed with a gentile touch. The classics are all here, ready to be uncorked to match your choice of food. A pilgrimage to the heart of wining and dining is to be had in one of Dublin's legendary venues. Alongside devising an ever changing seasonal menu for the Cellar, Ed has also found time to develop a range of products for The Merrion Pantry range. We can't sing his praises high enough.
