High end dining, in one of County Waterford’s most historical houses. The Roseville Rooms at Faithlegg House Hotel sets the scene for a magnificent culinary experience. A main dining space is connected to an annexe dining room by a conservatory style area. All three have lovely garden and countryside views. Original features abound – in corniced and moulded ceilings and large draped windows. The main dining room has a grand fireplace – an original piece from the old house. In the evenings, pristine table linens and glistening glassware are totally in keeping with an era of elegance. Sit here and imagine how Faithlegg’s previous owners once lived.
Head Chef Jenny Flynn started her tenure at Faithlegg with a four year apprenticeship, following college cookery training. She learned her trade thoroughly and progressed to become Sous Chef to the then Head Chef. On his departure, she inherited the top job. No finer woman! Her enthusiasm shines through. She’s one of the few females that can stick the pace of working at this level. In fact, Jenny does a hell of a lot more than just stick the pace – she sets it for herself and her team. Local and seasonal is her ethos. She’s fond of fish cooking – sourcing from a supplier in Dunmore East who uses local boats and takes keen interest in sustainability and responsible fishing. Find fresh Irish hake, mussels and monkfish among the catch on the menu. Meat lovers can be confident in well aged local beef, lamb from the Comeragh Mountains in Waterford and Irish pork.
Presentation is posh but not stuffy – a good mix of visual appeal with generous servings – country house style! You’ll want to try dessert – all made in house and followed with teas, herbal teas and fresh coffee with a selection of gorgeous homemade petits fours. For those who prefer a savoury end – the Irish artisan cheeseboard with traditional accompaniments of crackers and home made chutney does the job perfectly. You’d expect a decent wine list to go with all that lovely food. You’ll get it too – with plenty of advice and sound knowledge recommendations if you are struggling to choose. House wines by the glass as well as half bottles are part of the selection. After dinner, retire by the fire in the cosy bar area with a brandy or other after dinner tipple. A little piano music finishes the evening in grand style.
