Superfood Salad Recipe

Ingredients: 

100g mixed leaves

50g baby spinach

100g cooked quinoa

1 ripe avocado

1 pomegranate

5 orange segments

5 grapefruit segments

¼ chopped cantaloupe melon

¼ chopped honeydew melon

50g toasted pumpkin seeds

1 cooked & chopped beetroot

30ml extra virgin oil

1 juice of a lemon

Method: 

In a bowl mix all the ingredients together & drizzle the olive oil & lemon juice on top.
