Paul Devoy Announced as Clontarf Castle Hotel's New Executive Head Chef
An air of excitement has taken a hold at Clontarf Castle Hotel as this Dublin based hotel welcomes Paul Devoy as their new Executive Head Chef.
Paul Devoy is no stranger to Clontarf Castle Hotel as he joined the team in March 2019 as their Executive Sous Chef and was then appointed to Executive Head Chef in January 2020. Paul's exciting career before joining Clontarf Castle Hotel has well prepared him for this new challenge. He is a graduate of DIT's Cathal Brugha Street College in Tourism & Culinary Arts, this set him on his culinary journey that saw Paul become Head Chef at FXB Crowes Street in 2003 before heading across the pond to the bright lights of London to take on the role of Head Chef at The Exhibit Restaurant. Having had his fill of London and developed his skillset, Paul returned to Ireland, undertaking a number of senior positions over the years including Senior Sous Chef at the Four Seasons Hotel, assisting with the food offering as they transitioned into the InterContinental Brand.
Paul is a true believer of using the very best and highest quality locally sourced Irish ingredients where possible and delights in introducing diners to the small food producers and farmers through an exciting menu of local food.
Having easily navigated challenges and bringing forward innovation within his previous roles, Paul Devoy doesn't shy away from a challenge and we can't wait to see how his tenure at Clontarf Castle will evolve. Paul considers inspiring his team and motivating them to develop their passion for food as one of his most important roles, while also producing an exciting range of flavoursome menus that will suit all tastes and have diners coming back for more!
