Chef McMeel Launches Delicious Summer Menu

There's a bevy of seasonal delights on The Catalina's spring/summer menu at Lough Erne Resort, including honey from Executive Chef Noel McMeel's garden at home. 

Silky smooth honey notes influence the menu at the award-winning Catalina restaurant this spring / summer, brought direct to the resort from Executive Chef Noel McMeel’s garden at home.

Cream of White Onion Soup offers a light and fresh twist on the traditional French starter, enhanced with caramelised local garlic and a sweet, woody truffled honey dressing.

Other starter highlights include Irish Quail with sour celery and sweet mushroom served with a red cabbage gel. True to form McMeel also nods to indigenous ingredients in the form of Smoked Lough Neagh Eel, Comber Potato Puree with Armagh Bramley apple with seared Irish Scallop.

Thornhill Duck is the star of the main course options, brought to life with the sharpness of a Mandarin Orange Jelly and the floral undertones of Noel’s Garden Honey. The famed Irish meat is complemented with fragrant and sweet Ras El Hanout, Carmel Toasted Hazelnuts and Thyme Jus.

McMeel’s Signature Pork dish remains a constant, celebrating the very best of Fermanagh produce in the form of Pat O Doherty’s pork comprising of Pork Fillet, Crispy Shoulder, Hock Terrine & Rosti, Confit Belly and Tapioca Crisp served with Sour Cabbage, Apple & Sage Butter, Celeriac and a smoky sweet Maple Jus.

The decadent Seared Irish Fillet of Halibut will delight fish lovers, served with Caramelised Parsnip Puree, Baked Armagh Apple, Sour Grape Jus, Dill infusion and Caviar.

The spring summer menu has been designed exclusively using seasonal, locally sourced and traceable ingredients. The resort’s front of house team has also recommended a wine pairing for each course based on the ingredients and flavours of each creation.

Two courses are priced at £48 or £56 for three courses. Wines can be purchased by the glass or the bottle.
