POETIC MUSINGS…


Following on from our blog about the birds last week, we’d like to introduce you to the words of American poet Ogden Nash. Spring has sprung, the grass is rizI wonder where the birdies isThe little birds is on the wingThat’s absurd, I thought the wings was on the bird…Ogden Nash captured the happenings of the season in these few little lines. The grass is starting to be riz! Spring flowers like daffodils and crocuses are already in bud. Doesn’t that make you feel better? Our vegetable growers and smallholders have survived stormy weather and the first salad leaves of the season are starting to appear in the shops and markets. Kale, which has sustained us through the winter, is still going strong. If you’ve never tried this healthy green superfood, it’s a similar taste to spinach but stronger in flavour. Full of iron and boosting vitamins. Healthy experts say this is one of the best vegetables for juicing. Taken raw in a juice, it’s widely reported to be a help in preventing and assiting with many serious health conditions, including cancer. Kale was probably the original green vegetable used for Colcannon and some say the only green vegetable to use for this traditional Irish dish. Lots of fluffy potatoes mashed with butter and milk, salt and freshly ground black pepper, and curly kale. Great comfort food to go with meat at dinner time. Steaming is the best way to cook green veg like kale. Steaming softens the leaves but maintains more nutrients than boiling. Give it a go and tell us what you think!
