CODDLE UP IN DUBLIN


The capital of Ireland has its own food speciality.  Dublin Coddle is the sort of warming family grub you just love to eat. Salty bacon and big sausages meld with potatoes, carrots and onions in rich gravy.  This meal in one pot is loved by Dubliners and all those who visit the city. In this urban landscape, where mutton and lamb was not widely available in olden times for Irish Stew, this pork based alternative rose to fame.
