Recipe by Paul Arthurs Restaurant Kircubbin
Strawberries in peak season, what could be simpler than that of strawberries and cream with the addition of mascarpone and maybe served with a little shortbread. All the base ingredients of a reworked strawberry cheesecake.

Ingredients
Small punnet of strawberries, stock removed and halvedMethod:
Place prepared strawberries in a basin and gently toss. You may add a pinch or two of sugar at this stage if the fruit is not sweet enough for your liking. Tossing the strawberries will bruise them and so help the fruit macerate, providing you with a natural strawberry sauce. Set aside.
Gently beat mascarpone in a basin to a workable consistency. Fold in whipped cream. Add sugar to taste and then serve.
Spoon Strawberries into bowl and place the mascarpone cream on top. For am additional sweet savoury twist why not add a little shortbread - we reccomend Ditty's Oatcakes.
