A good scone has been the conerstone of traditional Irish baking. We are giving a touch of the green to ours for Paddys Day.
Here you will find an easy scone recipe, that can be used for the traditional scone, plain or sultana or with mixed
fruit and spice for chrismas, or canberrys.
Serves 10
Cooking time: 20-25 mins
Ingredients
50g ButterMethod:
Pre-heat the oven to 220 degrees or gas mark 7.
Sift the flour into a bowl, rub the butter lightly into the flour until the mixture looks like breadcrumbs, then add the sugar and chopped glace cherries.
Make a well in the centre of the flour and pour in the buttermilk. Mixing the dought with a palette knife.
When you have formed the dough into a ball, tip it onto a lightly floured surface and roll it out to about 2.5cm thick. cut the scones in to a desired shape.
Place scones onto a baking tray, brush them lightly with an beaten egg. Bake on the top shelf of the oven for 20-25 mins or until they are well risen and golden brown, then remove to a wire rack to cool.
Serve with butter, clottle cream and jam.
