Erfurt in Germany is hosting the IKA/World Culinary Olympics from 5 to 10 October. There will be nearly 2,000 chefs from across the world carrying out demos and taking part in competitions, with the winners’ ceremony on 10 October. There is an Irish interest in the contest – an Irish team is taking part. It consists of Alan Fitzmaurice (Source Sligo, John Street, Sligo); Michael Egan (Sedexo, VHI, Dublin); George Smith (DIT); Maggs Roach (Merrion Hotel, Dublin); Paul Philips (AnneBrook Hotel; Mullingar, Co Westmeath); Derrick Hall and Paul Duffy (ArrowMart, Dublin).

The beauty about tarts is that they can be eaten cold, warm or hot; they can be flavoured sweet or savoury; and they can be served as part of an elegant sit-down meal, a casual buffet or a lazy picnic. Expect to get to grips with everything from traditional Irish brown and white soda breads to French rustic loaves, flavoured rolls, baguettes and fougasse through to Italian ciabatta. The beauty about featuring breads on a two-day course is that we can also explore some of the more complex breads which take that extra bit of time, not your time, but slow-fermented yeast breads and overnight starters. This allows you to create interesting breads flavoured with pesto, sundried tomatoes, olives or caramelised onion and we'll also be taking advantage of all the summer fruits on offer. You’ll come away with a host of recipes, but more than that, you’ll leave with the confidence and practical knowledge to be able to rustle up any of these creations.

Cork Food Festival

Tastefest was a welcome addition to the city of Cork in 2011; it created a fun atmosphere around the city and brought the people of Cork together to celebrate Cork food. It gave the restaurants of Cork an opportunity to show off their delicious menus and culinary skills to a larger crowd and to new customers and also highlighted what local producers had to offer.

We are delighted to announce the return of this food festival this year, revamped and renamed as Cork Food Festival. It will be held in Fitzgerald's Park from July 19th - 22nd.

This year we are planning to build on last year’s event and make it an even better one, we are looking to put more of an emphasis on Cork producers to truly make it a festival celebrating everything Cork has to offer regarding food.

2012 marks a milestone year for the Dubai Duty Free Irish Derby festival featuring the Good Food Ireland Village taking place at the Curragh from 29th June to 1st July, as the Dubai Duty Free Irish Derby race will take place on a Saturday evening 30th June for the first time in its history. This year marks the fourth year of Dubai Duty Free’s sponsorship of the festival and the world’s leading airport retailer will once again sponsor the prestigious Most Stylish Lady competition on the Saturday, in association with luxury jeweler Boodles, whilst the inaugural Debenhams Ultimate Ladies Day competition, judged by international renowned designer Ben de Lisi, will take place on Sunday, July 1st.

With the emergency of the new food legislation the need for formal training / education of food workers in good hygiene practices has been encapsulated in law. (E.C. No. 852/2004) This course is designed by a team of environmental Health Officers with experience in food hygiene inspections and food safety training.

The Primary Course in Food Safety will :

Apply to all food handlers who work in the food service, manufacturing and retail whether they are full time or part time workers.

Aim:

The aim of the course is to create an awareness and knowledge in food workers of the reasons for the importance of good food safety practices.

Duration:

8 hours + 1 hour exam.
