100% Wholemeal Flour – 3 cupsMethod:
To make Maurice’s Traditional Irish Brown Soda Bread place all the dry ingredients in a large mixing bowl and mix thoroughly with your fingers allowing the air to pass through the mixture.
Mix for a couple of minutes and make a well in the middle of the mixture. Break egg into bowl, add buttermilk and whisk. Then pour mixture into well of dry ingredients, holding back a small amount. Mix until all combines, (the mixture should be quite wet).
Pour mixture or dough into a greased baking tin and if you like sprinkle with some sesame seeds or poppy seeds, which brings a lovely appearance to the loaf when cooked. Place in a pre-heated oven, 150/160 for 55-60 minutes.
Check if loaf is cooked by inserting a skewer into the loaf, if the skewer is completely dry when removed the bread is cooked. Remove loaf from tin, (should sound hollow when tapped), and allow to cool.
Top Tips:
A little drop of Guinness can be added to the buttermilk/egg mixture, which darkens the bread and introduces a yeast flavour, a small bit of brown sugar can also be added.
Try sultanas and walnuts, try pumpkin seeds, sunflower seeds or any seeds. Try some chopped apricots or your own favourite dried fruits. The combinations are endless...but most importantly…enjoy and have fun baking.
Remove loaf from tin, and tap the loaf gently it should sound hollow when tapped. Place on a flat surface or and allow to cool, before serving.
Hi everyone I made this soda bread and I must say it was really tasty, however I would like to point out two particular things that will make the difference. First only fill your baking tin up to the halfway point because the mixture will expand and spread out over the top of your baking tin. Second I would increase the temperature of the oven say 170 for 55 - 60 mins. Otherwise it is a very easy and simple bread to make.
Hey Maurice Thanks for sharing your recipe and methods through your video - I made my first Brown Soda Bread last night and had it with my family today. It was a little different than we expected, so I had another look at your method and spotted the problem. Your recipe as it is written asks for a tsp of Baking Powder and also one of Bread Soda. On your video you explicitly say to use Breadsoda only. Now just baked my second Soda Bread and it tastes a whole lot better. It may help others to have this changed. Had some very good and enjoyable food in your lodge/hotel on a few occasions. Keep up the good work
I made this brown bread for the first time and couldnt believe how easy it was. the little video of instructions to accompany it was really quite helpfull. I am now sharing this bread recipe with friends and am making it on a regular basis adding my own fruit etc every time to try new flavours. I cant believe how easy it is to follow and look forward to trying more.
