We are an island and surrounded with an abundant supply of fish and shellfish so is it any wonder that we have a growing number of Approved Culinary Educators whose emphasis is on providing local ingredient led courses.

Baking Academy of Ireland
Lucan Road Old, Palmerstown Village, Dublin 20The skill of bread making and hand-crafted baking and cake decoration were in danger of being lost and replaced by machinery. Derek O’Brien’s wonderful Baking Academy in Dublin’s Palmerstown is at the heart of the drive to revive such skills and preserve the art. The academy is a glorious hub of learning and passion.

Ballymaloe Cookery School
