Declan Ryan was well known some years ago as a chef/restaurateur. Nowadays, he’s famous for his wonderful range of breads, produced from a small bakery just outside Cork city. The breads include some traditional Irish soda breads as well as wholemeal, white and rye sourdough, and white, wholemeal and spelt yeast breads.
Once you taste any of the breads, it’s easy to understand their popularity, as they are fresh and wholesome as well as being very high quality. Flours used in the making of the bread include organic, French and traditional stone-ground Irish flours. And as you’d expect, there are no chemical improvers or additives.
Some of the breads have variations on the traditional – products such as walnuts, red wine, tomatoes and herbs give an extra flavour that’s highly delicious. The West Cork soda cake, made with the addition of Macroom oatmeal, is one of the most popular products.
