The cows graze land around the family farm in Waterford, producing the milk for this farmhouse based ice cream production. Bluebell Falls Goats Cheese

Ballynacally, Co Clare

Goat’s cheese has become hugely popular in Ireland in the last twenty years. Bluebell Falls Goat’s Cheese is one of the originals. The farm has been in the Keane family for several generations, and the goats were introduced sixteen years ago. The milk grew in popularity and cheese making followed in order to increase the income of the farm. The Bluebell herd of 240 goats graze in rolling pastureland overlooking the Shannon estuary in Co. Clare. From this rich grazing and a supplement of barley, wheat and oats, the goats provide milk for a superb range of soft and hard cheese now produced by Paul Keane.
