Declan O’Flynn was genetically programmed to be a sausage maker! Yes he really was! His grandfather William O’Flynn trained with Henry Denny, and in fact, was responsible for making the sausages which earned the company it’s first gold medal in the 1920’s. Added to this, William’s wife Mary O’Driscoll, Declan’s Grandmother, hailed from a foodie family in the Bandon area of West Cork. So really, there was no escaping ‘the business’ for this third generation banger expert.

There aren’t many people who love food who haven’t heard the name Isabel Sheridan. This French lady from the Loire Valley set up On the Pig’s Back in Cork’s gourmet English Market sixteen years ago. And her stall has grown to become on of the leading lights of food shopping in this culinary Mecca. Stocked with a vast array of home produced Irish farmhouse cheeses and home cured charcuterie of Good Food Ireland members like Gubbeen Smokehouse, and Jack McCarthy, fabulous handmade fresh sausages, G's Gourmet Jams and much, much more in the treasure trove of this food stall.
