Spinnaker - Seafood Chowder

With wonderfully fresh Irish Seafood in abundance, this is a delicious healthy recipe for you, your family and of course your wallet and it's so quick and easy, you'll wonder why you haven't tried it already!

Serves 4


 
 

Ingredients

• 200g of butter
• 25g of white flour
• 500ml of milk
• 200ml of white wine
• 2 carrots
• 2 small onions
• ½ a leek (optional)
• 200ml of chicken stock
• Mussels (optional
• 250g of cod/hake
• 250g of salmon
• 250g of smoked haddock
 
 

Method:

  1. Heat butter in pot and add carrots, onion and leek.
  2. When butter is completely melted mix in flour with a wooden spoon. Cook out flour for 2mins, stirring continuously.
  3. Add wine and cook for another 2mins
  4. Wisk in milk and cream then place lid on saucepan and simmer for 10mins until the base thickens
  5. Add stock and some dried dill
  6. Add fish and cook for 6-8mins until fish is cooked.
 
 
To Serve
