Mossfield Organic Farm       Back to Food Producers

Ralph Haslam, the dynamic dairy farmer of Mossfield Organic Farm, and the only organic cheese maker in Ireland, has been in the dairy industry since 1982.  In 1999 Ralph went into conversion and within two years became a very prominent Organic farmer in Co. Offaly.  Ralph supplies Glenisk with their entire organic cow’s milk for their yogurt production and also supplies buttermilk to Stapleton’s and other local bakeries.

Ralph identified a large gap in the market for a good quality Irish Organic cow’s milk cheese and less then three years ago went into his very own cheese production.  After just one year of cheese making, the newcomers walked away from the prestigious World Cheese Awards with gold and two silver medals and were recently selected best new cheese of 2005 at the IFEX in Dublin.

Not content with sitting on his laurels this entrepreneur identified yet another gap in the Irish market for Organic Speciality Ice creams.  Ralph is currently doing trials on a delicious range of ice creams and sorbets

  • Chocolate
  • Blueberry
  • Blackcurrant
  • Raspberry

One of the by-products of the ice cream manufacture is Organic Buttermilk.  Currently Mossfield supplies this to a few local bakeries including Stapleton’s but there is a growing demand for this product amongst Craft Baker’s of Ireland, especially those in the Organic, Artisan sector. Another by-product is the Organic Cream, an excellent raw material for the Irish confectionery producer.

Another string to Ralph’s bow is his dedicated Organic shop in Birr managed by Ralph’s son Jonathon. Walk into the ‘’The Organic Store’’, Birr and your five senses will explode with the mouth-watering temptations of fresh fruit, vegetables, cheeses and many more delights.
