“I worked closely with Good Food Ireland during the Volvo Ocean Race around the world during 2008/09. Our brief was to display the best of Ireland through the work of artisan producers to add to the attractions for visiting Ireland and Irish food. From presentation to co-operation, Margaret and her team made a massive difference especially creating ideas for attracting media coverage. Fresh ideas were welcomed and treated with a 'can-do' attitude and regardless of the difficulties of working at short-notice in overseas venues, Margaret delivered the same high standard of organisation throughout. If the success of the race stop-over in Galway could be traced to a single moment, the Good Food Ireland reception the night before the race started its 39,000-mile journey in Alicante would have to make the short-list - a huge crowd of media for a traditional buffet ensured that enthusiastic reviews and word of mouth PR followed in the seven-month build-up to the Irish stop-over."
