Mags and Ger Kirwan are the custodians of a terrific heritage. Their Goatsbridge Trout Farm is located on the River Little Arrigle, which has been fished intermittently since the twelfth century! Today, their premium product is on the menus in many of the greatest Irish restaurants and their hot smoked trout is among the favourite staples on Irish dinner tables. We visit this passionate duo at the farm outside Thomastown in Kilkenny and are enthralled by their knowledge, enthusiasm and connection to the land on which they live and work. McConnell’s Fish Shop was previously located on Dublin’s Grafton Street, but due to high rents moved to its present location in 1995.
