Paul Carroll's eighteenth century Georgian house sits on the outskirts of pretty Carlingford Town, which is nestled at the foot of Slieve Foy in County Louth. This is a seriously character filled place, complete with wonderful creaky wooden floors and delightfully temperamental sash windows. The rooms, as with the welcome, are warm and inviting and decor is simple and sympathetic to the history and setting of the house.
Dinner is served in the stunning drawing room, complete with grand piano and is five courses of fantastic local food, using herbs and vegetables from the kitchen garden, where possible. We started with an Amuse-Bouche of deliciously Piquant home-pickled Herring and an Earthy Salad of Puy Lentils and Parmesan. This followed with a hearty Fish Soup of Mussels, Seabass and Ballagan Lobster, which was both delicately, aromatic and boldly flavoursome.
The main course of Succulent Rainbow Trout with Pungent Cauliflower Purée and Pea Dressing was a triumph an indulgent 'Chocolate Plate' to finish, comprised of an oozing Chocolate Fondant, White Chocolate Mousse and Creamy, Homemade Ice-cream. This chocolate dream completed some fine cooking in a gorgeous setting.
Breakfast is also a culinary treat with Moyallon Dry Cured Bacon, Des Savage Cooley Sausages, free range eggs and homemade breads, jams and marmalades all lovingly prepared by Paul’s mother Joyce.
The Cookery School, established in 1993 by Joyce Carroll, attracts high calibre guest chefs such as Ursula Ferrigno and Paula McIntyre, and the impressive programme of events includes fishing trips on Carlingford Lough, whiskey tasting and eight-course gourmet nights.
Civil Ceremonies can now be held at Ghan House for up to 45 guests and the adjacent Heritage Centre for 110 guests. Contact Ghan House for more information.
