This small traditional family run farm, owned by Noreen and Martin Conroy, has gone right back to the root of the matter when it comes to good pork - root being the operative word here! Their free range pedigree herd of old fashioned rare breed Gloucester Old Spot and Saddleback pigs root, forage and wander at will in the great outdoors. They are fed on a diet of rolled wheat supplemented with fresh turnip, swede and kale grown on the farm. Not an ounce of commercial ration in sight here. So no wonder the resulting pork tastes fantastic!
Noreen and Martin are members of the Saddleback and Gloucester Old Spot Breeders Clubs, which means they take great pride in breeding their own stock here on the farm. They also farm a few cattle and sheep, and geese and turkeys for Christmas, but the pigs have taken top spot to become the main part of the business. The Woodside herd is now thriving, and even the couple’s five children find themselves helping out with feeding duties from time to time! Once matured, pigs are taken to a local abattoir for slaughtering, and then come back for butchering to the farm. From here, the Conroys make a range of fresh and cured pork products.
Fresh pork comes in cuts like in loin or loin chops, roasting joints like belly or leg, escalope’s, steaks and mince, as well as home made Cumberland Sausages, Gluten Free Sausages and Traditional Pork sausages. You will also find the unusual items of offal like delicious pig’s liver and kidneys, pig’s tails and caul, which is used by chefs to wrap meat pates and such before cooking. As in the days of the pork farmers of old, everything on these pigs is used bar the oink! Woodside Farm also produces a range of home cured bacon like streaky, back rashers, collar, loin and fillet, alongside dry cured hams, and the traditional trotters, pig’s cheeks, and ribs.
Noreen and Martin believe in farming in a sustainable way, and work towards a low carbon footprint at all times. Their ethos is to supply local food to local people, and to protect and create a market for these rare breed species which are not being utilised in commercial pig farming. Find all Woodside Farm pork products at farmer’s markets in Midleton on Saturday Mornings, and Mahon Point, Cork City on Thursdays, and in the Ballymaloe Cookery School Shop.
