Bluebell Falls Cygnus Goat’s cheese was the first to be made when production began. This soft log goat’s cheese has long been in use by chefs, restaurants and hotels in Ireland. From this base, two further soft cheeses were introduced. Cygnus Honey is infused with garlic, honey and thyme, while Cygnus Pepper has garlic, mixed herbs and cracked black pepper. Both are superb in salads or for the cheeseboard. In 2007, the farm started production of the semi-hard Orion. This has a dark rind and sumptuous creamy white curd which is vibrant with nutty taste and natural sweetness. It’s at it’s best after maturing for six to twelve months, which really develops the flavour. The newest addition to this range is Pegasus, a soft mould rinded goat’s cheese similar to the soft rinded cheeses of France, with a good hit of lactic acidity from the goat’s milk, a hint of rich butteriness in taste and texture and some woodland mushroom aromas and flavours. This is a serious cheese for serious cheese lovers! It needs a little while at room temperature before serving when it can become soft and a little runny on the inside – yummy with crusty bread or crackers and some fresh fruit. What more could you want for a gorgeous lunch or after dinner bite?
