Since starting to make fudge commercially in 1999, Tomas has worked to develop over 20 different flavours of fudge - inspired by seasons and tastes and feedback from his customers.  His fudge is made freshly each week, using good Irish butter and cream and other ingredients from his local co-op.  The three basic fudges are Brown Sugar Fudge, White Sugar Fudge and Chocolate, and after that, the world is his oyster when it comes to influencing flavours and colours. If you check out the website you will see the sky's the limit when it comes to presentation of the gorgeous layered fudges, the swirly patterned ones, and the colourful chunks that look superb in their exquisiteness. The best thing is that they taste as good as they look!

Flavours include Banoffee, Cappucino, Caramel Whiskey Raisin, the award winning Tiger Butter and Irish Coffee, Strawberries and Cream, Granny's Nutty Fudge, and many more, including a Flavour of the Month determined by season.  On Patrick's Day this year, the flavour of the month was a layered green, gold and white fudge with flavours of lime, orange and vanilla.

Man of Aran Fudge is available online and via a network of markets, craft fairs and agricultural events in Ireland.  The first sales were made via the upcoming farmer's market network of the time - which still remains a vital platform for presenting this artisan product to the public.
