Paul Flynn’s reputation really does precede him! Paul is regarded as one of the foremost Irish chefs, cooking exciting and modern Irish food and showcasing the best of local seasonal food produce. Paul is not only a renowned working chef, but also a TV chef, food writer and author of two best selling award winning cookery books.
Over a decade after Paul and his wife Máire opened their uber-stylish Tannery Restaurant , taking a high end food experience to a small Waterford town, they have now successfully opened, the Tannery Cookery School in pretty Dungarvan, featuring a state of the art demonstration kitchen with further adjacent guest accommodation.
The Tannery Cookery Schooloffers a range of exciting cookery classes. This state of the art Cookery Schools The Tannery Cookery School offers an exciting range of courses to suit all tastes and abilities from evening demos to a more substantial five day hands on course. The cookery school features a state of the art kitchen with workspaces for twelve people to work hands-on. Paul has developed a range of courses, which reflect his cooking ethos.
As you can imagine with Paul’s connections the Tannery hosts an array of guest celebrity chefs each coming year, many of whom are also fellow Good Food Ireland members - Richard Corrigan of Bentleys Oyster Bar & Grill, Ross Lewis of Chapter One, Domini Kemp of Itsa4, Denis Cotter of Café Paradiso and many more who will share their cooking secrets and tips.
They are also very excited about their Glanbia Garden, formerly derelict land behind the cookery school, which they have developed to engage and educate the community and from where they source their most local freshest produce which they use in both the Tannery Restaurant and the Tannery Cookery School. The garden gives Paul and the team inspiration for their menus and for their cookery courses, in fact you can often find Tim Yorke hosting a course on market gardening.
The cookery courses are for everybody from the amateur home cook to the more adventurous cook and even those who might want to cook for a living, so whether you are looking for a course to improve your home cooking skills, a short cookery course with friends or a tailored course to suit a corporate event Tannery Cookery School is for you.
