The heart of the Golden Vale in Country Tipperary is the place to find the happiest pigs in the land! The organic free-range herd at Crowe’s Farm has unlimited access to the rolling pastures so familiar to this rural area of Ireland. These pigs fatten on natural organic grain based feed, and whatever they forage from the hedgerows and green fields they live in. And as a result, they produce deliciously tasty bacon and ham with the flavour of a bygone era.
Crowe’s Farm is a longstanding family business, now run by brothers TJ, John Paul and Ned Crowe, which produces a range of home made dry cured bacon using local farm pork, and the exclusive meat from their own free-range herd. Crowe’s bacon is made at the family farmhouse - which handles the whole process, right through from farm to fork. Home reared pigs are looked after by John Paul, a farming expert now nearing the end of a two-year period of organic conversion for his land. TJ is the butcher, ‘by default’, as he puts it, and at this stage, a Master Bacon Curer. And Ned is responsible for delivering the finished artisan product to independent food shops and selected food stores in Tipperary, Waterford, Limerick and Dublin.
John Paul started practicing organic farming methods in September 2006, starting first with cattle and sheep. Then early this year, he began establishing a free-range herd, which will be officially organic in December. Crowe’s pigs are a cross between Duroc and Gloucestershire Old Spot, slowly fattened and matured, and their meat combines essential plump and tender flesh with the taste of yesteryear only gained from a traditional heritage breed.
When the pigs are ready, TJ takes the reins, processing in the small family abattoir on site, then using a special recipe handed down from his father for bacon curing. He won’t even tell us how he does it, except to say it’s a dry cure with low salt – so you’ll just have to taste it to believe it. Peter Ward, of Country Choice in Nenagh, Co Tipperary, is a fan, as is Richard Corrigan and many other food gurus in Ireland. The Crowe’s Farm range includes rashers and streaky bacon, ham fillets and joints cured on the farm from pork raised by neighbouring farmers. And this Christmas season will see the first of the premium range free-range organic hams and bacon, which can be ordered straight from the farm. Treat yourself to a whole ham on the bone, which takes a full twenty-eight days to cure, and cooks a treat in the traditional way, boiled gently first, the oven-glazed with mustard and brown sugar.
