Butchery Ireland - More than just a butchers...

Passion and enthusiasm shine strongly from both Martin and Audrey Divilly when they speak about their champion craft butchers shop in Galway. It’s been in its present form for just two years. Originally a family butchers, Martin is the third generation of his family in the business. He took over the business from his father 11 years ago and since then, has introduced major changes to the original shop, including buying an adjacent shop, doubling the space.

In 2,000, the shop became a Food Hall, including a deli. And it won Retail Store of the Year in 2003. But Martin and Audrey realised that fresh meat and meat products were by far the more popular foods being sold. So two years ago, the shop was changed completely. On one long counter, there is a tantalising display of kitchen ready products. These include Mexican, Thai and garlic stir-fries, homemade chicken cordon bleu and Kiev, satay kebabs, pork and apple burgers, BBQ ribs, lamb noisettes, marinated lamb shanks, beef Wellington, beef olives, meatballs and Tandoori duck.

Fresh meats include all the usual products but you can also buy ox tongue and rabbit. Most of the butchering is done on the premises. The bacon is home cured, using the best Galway pork. As this is done on a weekly basis, there’s no need for huge amounts of salt so the bacon is not only delicious but also healthier. Beef is dry-aged, producing a tastier and more tender product, completely traceable from farm to fork. Each Saturday, Audrey rustles up a barbecue – the shop has an open front. And when the aroma of meat cooking wafts around, queues form to have a taste. And as the products are excellent, business is good. You can choose from a number of sauces and chutneys, specially made locally to accompany your burgers or steaks. There’s an organic range of products, including Ballysax chickens. With the front of the shop open to the elements, a very high standard of hygiene and cleanliness has to be maintained. But in this bright, modern shop, it’s clear that this is a given – everything is shiny bright and clean. Staff are wonderful, very knowledgeable and friendly.
