Romance was in the air back in 1872 when Utred Knox loved his bride so much that only a castle would do for her to live in. And Mount Falcon remains a castle fit for any bride.

In 2002, when the Maloney family bought the original house on this 100-acre estate it contained just six bedrooms. They did a total refurbishment and added on a complete new section. But as the whole blends so seamlessly together, it’s impossible today to see the dividing line. And the family has ensured that the house has retained its history, charm and hospitality.

The rooms in the old house were extensively and sensitively restored – all the wooden floorboards were stripped back and re-polished. When the modern wing was completed in 2006, the house was once again put on the luxury accommodation map. Two splendid suites in the old house have been sumptuously restored, with the original 1876 features intact. Antique furniture, marble fireplaces and pitch pine shuttering and floors create a space that is restful and luxurious. Bathrooms have the most delightful cast iron freestanding bathtubs where you can lie and gaze at the mature forest outside.

The new bedrooms, deluxe and superior, reflect the period of the house with antique furniture, including a cheval mirror. The bathrooms are modern, with his and her sinks. The main reception rooms, downstairs in the original house, are more than charming. The morning room and the lounge are filled with sunshine during the day, and cosy at night. You can enjoy a drink in the intimate setting of the Bolthole Bar before dining in the Kitchen, Mount Falcon’s restaurant. As you walk along the high-ceilinged corridor to the restaurant, you’ll see the original servant’s bells on the wall. The Kitchen restaurant is in two parts, one being the original kitchen of the house, complete with an old fireplace and range and a wonderful collection of plates and utensils. The other part is new, though it’s so much in keeping with the house, it could very easily be a converted barn. Warm brick walls, an extremely high ceiling and comfortable furniture make dining a pleasure. Executive Head Chef Philippe Farineau sources local produce and transforms them into some divine dishes. We ate Clew Bay scallops – a carpaccio marinated with citrus fruit, seared and set on crisp pork belly, an inspired combination, and a slow confit of Irish Peking duck leg with pickled plums and foie gras spring rolls. Seafood features heavily with local cod, black sole and halibut available. Meat lovers will love the braised ox cheek pie or rack of lamb Provençale.

You can take a late evening stroll around the gardens, down to the lake, past some of the elegant self-catering accommodation: The Woodlands, The Courtyard and The Lakeside. For the more energetic, there are 12 golf courses within a radius of 30 miles and of course, fishing and angling are a major sport in this area.
