Bakery Ireland - Natural Baking

Manuela Goeb is one of life’s enthusiastic happy people! She oozes a richness of spirit and generosity, which is reflected in spades in the quality of her handmade bakery and patisserie, on sale at the charming Breadcrumb Bakery.

This delightful shop and bakery is easily found by the seductive smell of all kinds of everything wonderful coming from it’s ovens from the early hours of the morning. Seek it out down the tiny side street off the road into Kenmare town, pop inside, purchase a cup of freshly brewed coffee or tea and whatever tantalises your taste buds. Then, if the sun is shining, perch yourself on the garden bench outside and just enjoy! If you are lucky, the baker herself might come out and join you – and pretty soon you’ll be laughing along with her. A visit here is so much more than a trip to buy bread!

A background in nursing and consequently, a healthy disrespect for conventional medicines, has given German born Manuela the inspiration to create great bread and pastries that are really good for you. This is not just any old bread now. Here at The Breadcrumb, the lady of the house sees it as her duty to ‘breaducate’ her customers on the benefits of healthy home baked bread, which uses quality ingredients, passion, patience and time honoured methods in its production. She specialises in natural sourdough, which uses no artificial additives, preservatives or improvers, as she’s convinced that these are responsible for today’s rise in allergies. In fact, her top priority is to cater for wheat and gluten allergic customers. To this end she uses a large percent of rye and spelt in her loaves.

Her German upbringing meant Manuela was ‘spoilt for bread and pastries – ‘the Germans are wonderful bakers’ she says. A part time job in a bakery in Germany in her youth instilled the love of the job, but her success in Ireland is down to hard work, experimentation, and a huge respect for the feedback of her customers. Manuela seeks out the best organically produced German flours which contain no pesticides, and start to rise almost immediately the dough is made because they contain, as she puts it ‘so much life’. For her Irish breads, she uses traditional home produced wholemeal flour and oatmeal. The shop itself is a feast for the eyes and nose. Get a whiff of almondy scents as the morning’s batch of Danish pastries bake to perfection. Catch a snatch of savoury aniseed from the tray load of rye bread just taken from the oven. Admire the selection of loaves of all shapes and sizes arranged on the wooden shelves behind the counter, and the glass fronted display cabinets packed with golden croissants, sliced quiches, savoury pizza wedges, and carefully decorated cakes and pastries. Then try and choose. You won’t find it easy.

Manuela’s breads, all handmade here on the premises in the tiny bakery behind the shop front, include a 100% rye, a rye and wheat mix, Spelt bread, Granary with lots of seeds, Pumpkin Seed loaves, Sourdough, Irish Brown Soda, olive baguettes, the list goes on and on. All are made with slowly fermented base dough of sourdough and/or yeast. This method produces superior taste and aroma, helps reduce acidity, and partially breaks down complex proteins and enzymes, leaving the bread much easier to digest. Sweet and savoury pastries use Irish butter, cream, milk and eggs where appropriate, to give a serious blend of continental style with homegrown traditionalism – quite the best balance! Be tempted by curly croissants and pretzels, frangipane cakes and tarts, lemon cakes, small and large seasonal fruit crumbles, gluten free chocolate brownies made to Manuela’s grandmothers recipe, carrot cake topped with cream cheese icing, old fashioned fruit plaits, glazed Palmiers and the rest. See what we mean? You’re wonderfully baffled already – but if you’re really stuck for choice, our advice is - just ask the Boss!

I highly recommend The Bread Crumb when visiting in Kenmare. The fare is delicious and the staff and owners are friendly, courteous and were very helpful in providing information about Kenmare as we were visiting the area from the States for a vacation. The food is wonderful and we ate at the cafe every night during our stay at Kenmare. A definite recommend Go and enjoy this delightful cafe Slainte - Donna Minton Destin, Florida USA
