It’s not easy to produce an award-winning cheese. But to produce one within a few short years of cheese making would seem to be an impossible task. Not so for Ralph Haslam, owner of Mossfield Organic Cheeses.

Back in 1982, he was a dairy farmer. In 1999, he made the huge decision to switch to organic production and within a very short time, he became a very prominent organic farmer in the Co Offaly area. After just one year of making cheese, he succeeded in producing an organic cheese that is of such high quality that it took gold and silver medals at the World Cheese Awards. And in 2005, it was selected best new cheese at the IFEX in Dublin and won an Irish Food Writers Award the next year.

The cheese has a unique flavour and a well-balanced richness. Mossfield Organic Cheese is the only organic cheese in Ireland. They supply Glenisk with their entire organic cow’s milk for their yogurt production and also supply buttermilk to various local bakeries. The cheese is available from the farm or from a number of speciality shops throughout Ireland. Choose from young or mature and there are a number of flavoured cheeses including cumin and basil and garlic. The added flavours are well chosen and complementary, particularly the cumin.

I bought the mature chedder at a local farmers market whilst on holiday in Ireland and was immediately hooked; so much so that the following week I returned to the market to buy the entire stock I dont think I have ever tasted anything like it It really is a taste sensation and the flavour of the cheese lingers on the tongue for mintues after.Amazing. I look forward to my return to Ireland this summer to hopefully visit the farm in person and purchse lots more.
