The lush pasture land of Kanturk in Duhallow, Co Cork is a region well noted for its quality grass and clean environment. This is the land where the herd of cows that produce the milk for Ardrahan dairy products, graze happily. And the cheese made form the milk, Ardrahan Farmhouse Cheese reflects that unique flavour. The cheese is made from pasteurised cows milk, vegetarian rennet and natural starter culture.
A type of semi-soft cheese with a pungent aroma, Ardrahan has a buttery textured honey-coloured centre with a complex delicate flavour that lingers, leaving a very pleasant after-taste. It has a washed rind, which grows into a golden colour, and its size and weight tend to vary slightly due to the fact that it is a hand-made product.
Ardrahan also develops a nutty flavour with maturity. It contains only 25% fat approximately.
Mary Burns and her family run the farm and produce the cheese The Burns family entry into farmhouse cheese was accidental. In the 1970's Mary’s husband Eugene realised he wasn’t able to get the types of foods he wanted his family to be eating. He started making yoghurt, cheese and sour cream. Twenty years later, the Burns family have perfected the farmhouse cheese and have made a family business from the product.
Ardrahan has also recently launched Duhallow Farmhouse Cheese, a semi-soft cheese with a mild flavour and a creamy texture.
Ardrahan Lullaby Milk is produced on the farm at Ardrahan. Cows are milked in the dark of the morning. As a result, it has naturally occurring higher levels of melatonin, a natural substance found in all our bodies. The nighttime hours enhance the level of natural melatonin in the milk. It helps our bodies to regulate our sleep-wake cycles allowing our body clock to switch off naturally. Ardrahan Lullaby Milk is pasteurised but not homogenised. Therefore, it retains all its natural goodness and needs to be shaken well as the cream settles on the top of the bottle.
Ardrahan Lullaby Milk is available in all SuperValu's and Dunnes Stores nationwide, and also can be found in some Tesco stores
