Tipperary’s fertile pastures are ideal for apple orchards. At The Apple Farm in Cahir, owner Cornelius Traas knows that and has made the most of what nature provided. His orchards produce juicy, crisp apples that in turn give their bright, fresh flavours to the handmade and pressed apple juice that Cornelius produces here on the farm.
No less than twelve different sorts of apple are grown here. Early season starts with James Grieve and Katya, followed by Delba Estivale. As October kicks in, find unusual varieties like Alkmene and Cevaal alongside more familiar Cox’s Orange Pippins.Golden Delicious, Elstar and Jonagored also make an appearance later in the season, and all the while you can get the plump, knobbly Bramley’s Seedling, the famous cooking apple. Bramley's have a sharp citrussy and juicy flesh which cooks to a soft puree, making them ideal for inclusion in a typical Irish Apple Tart encased in buttery pastry, or some fabulous sauce to go with a crackly crisp joint of Roast Free Range Pork.
During the summer months, Con also grows luscious strawberries out on soil, where they soak up the natural minerals of the earth and take on a proper sweetness with just a brush of acidity, so different from any of those imported fruits, which appear out of season. There’s also plump raspberries too, the juicy pink Scottish Glen Moy variety which originally came from wild fruit grown in native woodland. Plums come on stream in August, with the dark bluish purple Opal followed later by the well-known Victoria. In November and December, if you are lucky enough to be in the area, you’ll grab a bag or two of the farm’s own pears, Conference, Concorde and Doyenne de Comice, to eat as they come or match with all those seasonal cheeses at Christmas.
Adding value to the fruit grown here, the farm also makes it’s own superb apple juice. Karmine Sonnaville and Bramley’s Seedlings are the varieties used for the juice, which are handpicked, matured for a few weeks before hand pressing to extract all the natural juice and flavours from the fruit. No filtration is used, just a natural overnight settling followed by gentle pasteurization, which prolongs the life of the juice but maintains all the original qualities of premium apples. Unfiltered apple juices takes on an opaque, cloudy appearance, quite natural, and has unique, palate-cleansing fresh flavours on the tongue. In short, this gives you a real buzz as a wake up drink in the morning, and will happily wash down a cheese and pickle sandwich at lunch too!
During the summer months, if you want to stay in the area for sometime, The Apple Caravan and Camping Park is a lovely spot with top class facilities and very spacious grounds. It is situated next to the farm and orchards and has the added bonus of it’s own kitchen in a converted apple store, hot showers, your own fridge and freezer, laundry facilities, hard standing for caravans and much much more to make sure you have the most comfortable of stays. This farm accommodation in Tipperary comes at a very reasonable price, and the area is well located for sightseeing throughout the region, close to St Patrick’s Well, Cahir Castle and many other attractions here. Your visit will be a pleasure whatever the weather, and made pure paradise if the Irish sun shines!
