In the university district of Cork city, up a short road leading to a grand driveway lies Hayfield Manor Hotel. You wouldn’t believe how tucked away this five star luxury accommodation is, considering it’s central location. Although this part of Cork is well populated with a mix of permanent residents and UCC students, the hotel itself is in its own grounds and has all the peace and quiet of the country.
Many famous guests have stayed here. Anybody who’s anybody has strolled through its doors. Everyone can feel like a superstar – the service is the same for the famous names as it is for the ordinary Joe - simply top class. And what’s really lovely is that despite it’s five star status, you just don’t feel awkward or out of place. There are no airs of pretension or snootiness in the ambience. From the moment you walk into the generous lobby with its sweeping staircase, you’ll feel very welcome indeed. Owners Joe and Margaret Scally, who also own the Killarney Royal, have made sure of that.
Rooms are fully equipped in grand style, from the opulent drapes at the windows, king sized beds and comfy armchairs, to the fluffy robes and slippers in the bathrooms, which come complete with traditional and roomy roll top baths and Elemis toiletries. Everything you need is to hand, and there’s always a welcome pack in your room, which includes water, cognac, fresh fruit and sensuous chocolate truffles in case you get the munchies in the night! Not much chance of that though, if you are dining in one of the two fabulous restaurants in house.
Head Chef Graeme Campbell has worked with some big names in big establishments previously, so brings a wealth of cooking experience to his position. He is committed to using as much local produce as possible, sourcing fresh fish from O’Connell’s in the English Market or Good Fish, Ballycotton, shellfish like fresh crab and lobster from Castletownbere’s Shellfish de la Mer, and meats from a local butcher. Poultry comes from Kildare and vegetables from a farm in Waterfall, just outside Cork city. Menus here depend on the time of year. Summer will see light dishes zinging with sunshine flavours, while autumn features comforting tastes and the appearance of seasonal venison, partridge and pheasant.
Perrott’s is the Conservatory restaurant with garden views, and a brasserie type menu. The atmosphere makes for a relaxed dining experience. First courses include Tempura of Tiger Prawns with Mango and Papaya Salsa, or Shredded Confit of Duck. Mains like Fillet of Beef with Sautéed Potatoes, Portobello Mushrooms and Garlic butter or Pepper Sauce, or Hayfield Manor Fish and Chips with Pea Puree and Tartare sauce are extremely popular. And you can bet your life you’ll always find something to attract your attention on the dessert menu. With things like Italian Hazelnut Cake with Chamomile Jelly or Mocha Cheesecake with Chocolate Sauce, who wouldn’t be tempted?
Overlooking the rear walled garden is Orchids restaurant, an altogether more formal dining space. The food service here is a theatrical performance, with waiters coming out all at once, bearing plates covered in silver cloches, which are all removed simultaneously to amazed oohs and aahs by diners! The modern décor of fuchsia and purple hues, in keeping with the finest fresh orchids, lend the name to the space. If you are celebrating a special occasion, this is the venue to beat all venues! First course dishes feature the delectable Tartare of Salmon and Prawns, which was recommended to us – and we’re jolly glad it was. The flavours were alive with vibrancy from citrus notes, and the Wasabi Scented Crème Fraiche added that oriental touch. A total triumph of taste! Our main course of Saddle of Veal with mushrooms reflected the change of season to early autumn and its intensely flavoured sauce based on veal jus was seriously rich and powerful. Afterwards, we enjoyed a warm Chocolate Fondant, which brought on sighs of deep satisfaction with each melting mouthful. Wines for both restaurants are well chosen and lists compiled by the Master Sommelier who takes great pride in recommending and even offering tastes to those unsure what to order.
But it doesn’t just stop with fine food, and elegant bedrooms at Hayfield. Oh no. The fun is only starting when you check in. This hotel has a luxurious Elemis day spa with swimming pool, peaceful treatment rooms, saunas, steam rooms and a Garden Gymnasium flooded with natural light, specially designed to pep up weary travelers who are suffering from jet lag. Hayfield’s Balcony bar is the place to sip a lunchtime pint or pre-dinner drink. There’s music here too, provided by a mobile piano which is wheeled in as and when. That just echoes the real homely Irish charm about this hotel. You won’t find many other establishments of this calibre that are so laid back when it comes to keeping their guests happy. Wheeling in a piano is something that would happen in a typical Irish house when the mood is for a party. But you just don’t expect it in this environment, especially not when the piano in question is a baby grand! However long you choose to stay here, the time will be peppered with a true Irish welcome, from the minute you are greeted at the front door to the moment the bellboy takes your bags to the car. It won’t be easy to leave, but you know you can always come back!
